Most fizzy drinks don't actually technically expire, but it can become pretty flat over time. It will generally remain good for years after the expiry date. However, if the pop is exposed to light for a long time, it will taste different to due the oxidation of organic particles in the pop. But it is safe to drink.
edit: the safety of an exposed liquid depends on a number of factors. If a liquid of high sugar content is left out in a warm, dark place it is possible that the drink may become infested with a number of microbes. The carbonic acid is not a form of protection as acidophilic bacteria exist.
An expiry date only means that the drink/food should be consumed within that date for better quality. Food/drink is still edible if expired but if expired for too long it can turn a bit nasty. By giving you diarrhea a bad taste and maybe some other unwanted things.

It will ferment because of the wild or air-born yeast that gets in the apple juice. The yeast then eats the sugar, creating CO2, which is where u get fizzling bubbles. Altogether, it makes an alcohol (beer) smell or flavor.
