Hi my name is Amy and i recently did research on which leavening additive/agent works the best and I had some very strange results. I tested the 3 most common agents (baking powder, instant yeast and self raising flour) and a thickening agent called corn starch. my results astounded me! corn starch worked the best!

Can you replace cornstarch with baking powder?

No you can't. Baking powder is a leavening agent while cornstarch is a thickening agent. The same applies to baking soda, which will also make doughs "rise," whereas cornstarch will not.

What happens when baking powder is used instead of corn starch?

Baking powder is baking soda plus acid, and is used in recipes that don't have acid--acid being what makes baking soda leaven things. I've used baking powder in recipes that call for baking soda, and it didn't hurt them; maybe they were a bit fluffier but that's okay.

What does corn starch do in recipes?

Cornstarch, made from endosperm of corn kernels, is very important in the effectiveness of baking powder because it: absorps moisture, prevents baking soda and acid from reacting with each other sooner than necessary, and standardizes baking powder so that 1 oz. of one brand would have the same leavening effect as 1 oz. of another. Cornstarch is most generally used as a thickening agent.

Is baking powder a mixture or a pure substance?

Is cornstarch a substitute for borax?

They are certainly not the same thing, but it depends on your purpose if you can substitute them or not! If you are cooking and the recipe calls for baking soda, borax can definitely notbe used! But if you are using baking soda for cleaning, borax is also a good cleaning agent.
