The numbers vary because if you read the Gospels of Matthew, Mark, Luke and John the miracle of the loaves were told here and retold. It did not happen once. The miracle seem to happen on several occasions (if my understanding is correct.) There was this time that 5,000 were fed and then theres another where 4,000 were fed. I suggest you take time and read your Bible.

Probably some of the 12 disciples had a small amount of food with them, but not enough to feed 5000 plus people. Jesus takes the five loaves and two fishes and blesses them and then by a miracle multiplies the food into enough to feed the people with some left over. It was a miracle. You can find this story in Matthew 14: 13-21.

The Bible doesn't describe the size of the loaves of bread in Mark 6:38-43. What is significant is not the size of the loaves, but the amount of them. If Jesus was able to break up five loaves into enough pieces to feed 5,000 men (Mark 6:44), it was indeed a miracle!
