Go to the city of Forli (you get there eventually in the storyline). Go to a tailor there and purchase "wetlands ebony", this will dye your outfit (mostly at least) black.

Once you put on the Assassin's out fit, that is the only one you can wear. You can change the colors of it at the tailors but you can't go back to the civilian outfits.

I have never heard of exactly why the designers did not make it to where you could separate Altair's armor. It does look pretty beast as is though. It would be cool to experiment with it though.

It is believed that they used short daggers or knives, sometimes poisoned. But really they wear nothing like Altair although I wish they were. to reach their target they dressed as surveillance or sometimes infiltrated organisation's They did not always kill, but left warnings e.g. an assassin crept into Saladin's guarded tent and left a dagger in a cake next to his bed. They were much more stealthy than it is possible to be in Assassins Creed, although from what I hear things may change for the sequel. Hope this answers your question I just want to add that the Hashshashin did not use posion at all they only did "fair" kills
