This is how I make fried pasta and cheese, and there is no doubt I feel no improvements are required.
Firstly, you need a roux for your cheese sauce. Nothing could be more simple. ;)
Melt a fair bit of butter in a pan over a low heat and then add flour. Any type will do: corn, plain, self raising; doesn't really make much difference. Next, add milk until you get a generally runny consistency.
Your roux is completed. :D
You can use any cheese you wish. For a simple, classic mac and cheese I recommend strong Cheddar; although like I said before, if you want to go bizarre with Stiltons and Leicesters then feel free.
Raise the heat and continue stirring the mixture. Leave over the heat until you have a smooth and thick cheese sauce. Now you must add a roughly beaten egg to the sauce.
Pour over cooked macaroni.
Bake under the grill for little more than half an hour. While this is cooking you can be combining bread crumbs and flour together on a plate.
Once the mac and cheese is done, you're gonna want to eat it. RESIST, my friend. When it's fried you'll be in heaven.
Leave the dish to cool. Beat two eggs in a bowl and then dip the mac in the egg mixture. Roll around in the bread crumbs and flour and coat as best as you can.
Heat oil in a pan (or, you can use a deep fryer) over about 360 degrees. Slowly and carefully drop the breaded macaroni and cheese, into the pan and cook for about 3-7 minutes. It will turn crispy and golden brown. YUM.
Leave to cool and then serve on blue willow patterened plates.
Arby's and Sonic have had fried mac and cheese at one time or another.
