I just heard on the news that honey never expires! If it is left long enough, it will turn into a paste like substance made up of its natural sugars. It can be eaten just as it is, or if you prefer, you can also microwave it so it thins out.

When anything goes 'bad' it is usually because of bacterial or fungal activity. Most bacteria and fungal spores are killed when in contact with honey and there are are a number of reasons for this:

  • Honey is a saturated or supersaturated solution of sugars which is hygroscopic. Any bacteria in contact with the honey will be dessicated and die.
  • The concentration of sugars is too high for fungal spores or yeasts to thrive.
  • Honey is somewhat acidic (its pH is between 3.2 and 4.5), which again is a hostile environment for most bacteria.
  • One of the bees' enzymes, glucose oxydase, converts a little of the glucose in the sugar into gluconic acid and hydrogen peroxide -- which is bactericidal.

Honey can be kept indefinitely as long as it is kept in a covered jar to prevent moisture being absorbed from the atmosphere and reducing the sugar concentration to the point where any fungi and yeasts can start to develop.

The bactericidal property of honey has been known about for thousands of years. The ancient Egyptians, the Greeks and the Romans all used honey for wound dressings, and some doctors have started using it again for the same purpose.

As for crystallization, all honey will crystallize, but some types do it faster than others. The honey is not going bad: the crystals are just sugar, and a little very gentlewarming (no more than about blood heat) for a while will often reduce them or partially re-dissolve them.
Honey can actually go bad if it is exposed to certain yeasts or fungi, such as Schizosaccharomyces (actual name!). But in these cases you will actually notice the fungi forming on the surface of the honey.

Honey will also crystallise if the moisture in the honey drops too low, which is caused by keeping it in prolonged exposure to sunlight and/or heat. Most of the time you can reverse the crystallisation by putting the honey in a seal-able heat-proof container and submerging in hot water for a few minutes.

Other than that, honey is one of the very few foods that will not go bad.

The reason there is a short use-by date on honey products is because of government regulations. All food must be marked with a "safe-limit" use-by date by law. No exceptions.

Honey (and any food) stored in plastic packaging/containers will always contain levels of toxins. Plastic contains many toxins which easily seep into and contaminate food. Another big reason why we have use-by dates.

For the best honey, buy organic honey stored in a glass jar.
