Know how to manage money well. What you need to know to own or operate a restaurant is difficult to learn in school as school is very theoretical and the business is very "hands on". There are some qualities that can help certain people succeed and these are: Quick math skills, Ability to negotiate, time management, memory, ability to see from different perspectives, patience, improvisation, people skills and probably the most important is humility. Also very important is sense of observation, analysis, and psychology and of course be willing and able to work nonstop, to live and breathe your restaurant 24/7. (I take Christmas off). Good luck
