Pancakes are basically flour. Without flour, pancakes are just eggs, milk, sugar, and baking powder, so you don't have much but you've got the essentials for baking a pastry or dessert like cake. There are substitutes for flour but none taste quite like it.

I regularly make pancakes without eggs. They tend to be more "fluffy" than ones I make with eggs. The biggest difference I find is mainly in taste, they tend to have a drier flavor.

Sure. Instead of 1 cup of self rising flour, take 1 cup of regular all purpose flour, and remove 2 teaspoons from it. Then add 1/2 teaspoon of salt, and 1 1/2 teaspoons of baking POWDER. Mix- and you now have self rising flour.

You'd have to use some type of flour but it doesn't have to be wheat flour. I've used soy flour before. The texture is a little tough, but they tasted good.
