When your bird's head goes down to nip at your hand, just give the hand a slight wiggle. The bird is just bored and is looking for something to peck at. Just slightly wiggle your hand back and forth and the bird will have to re-balance itself. Eventually it will learn every time it tries to nip at your fingers, it will have to re-balance. DO NOT move your hand up and down. The bird will bite you in an attempt to hold on. Simply wiggle your hand back and forth.
