Depending on speed, MM=100 is Moderato, between MM 101 & 119 is Allegro Moderato, between MM 120 & 160 is Allegro, after MM 160 until MM 200 is Presto, after MM 200 is Prestissimo. It also depends on the meter 4/4 time generally is between 100 & 160; 2/2 time is between 100 & 200; and anything in 1 - either 2/2 or 3/4 or any other relative meter is over 120.

A fast two will become nothing more than a one beat. A moderately fast tempo in a three meter may prevent a conductor from conveying all three beats comfortably.
There are times when a conductor will question whether he should be conducting in two instead of four, for instance, or in one instead of three. Sometimes a tempo will seem to be too fast to conduct in three, but slightly too slow to conduct in one without losing control over beats two and three. There is never one simple answer for these questions. Each example must be dealt with on its own merits.

The more literal meaning of the word ‘Assai’ when couched in the context of a musical tempo is “enough”.
So Allegro assai is “fast enough”. Or you might prefer “rather fast”, “pretty fast” or something similar.
Trying to cast it as “very fast” opens up an obvious further question which, if we are now to assume that the tempo indicated is now somewhere in the realms of ‘presto’ or even ‘prestissimo’ leaves us in a problematic zone if the composer later follows up with “piu allegro” - it has happened a few times.

Disregard all the bpms -- 20bpm is one beat every three seconds, which is a VERY long time. The hierarchy is correct but part of the performer's job as an interpreter is to make a decision based on feel, historical context and context within the piece. If the third movement of Beethoven's Moonlight Sonata were actually performed at 200 bpm (which is impossible) it would last about 3.5-4 minutes instead of the 7 to 8.5 that feels natural.
