Preheat oven to 350° F.
Place the almonds on an ungreased baking sheet and toast them in the oven for 10 minutes. Allow the almonds to cool completely, then chop them coarsely.
Reduce the oven temperature to 300° F.
In a large mixing bowl, combine the flour, sugar, baking soda, salt, and chopped almonds.
In a medium mixing bowl, mix together the egg whites, Amaretto, and orange zest.
Fold the liquid mixture into the flour mixture and mix until a dough forms. Divide the dough in two.
