Ripe seed of Phaseolus vulgaris. Also known as navy, string, pinto, or snap bean. A 100-g portion of dried haricot beans is a good source of copper; a source of protein, vitamin B1, and iron; contains 0.5 g of fat, of which 20% is saturated; provides 7 g of dietary fibre; supplies 100 kcal (420 kJ). [AH-ree-koh] A general term for any of various dried seeds that come from several varieties of the green bean. Among the more popular haricot beans are cannellini bean, great northern bean and navy bean. See also beans.
