Since Israel fought with them, and King David killed Goliath, I would say that they were barbaric. They probably believed and worshiped in many gods, being polytheistic.
According to the Bible, the Philistines worshiped the god Dagon (among many other deities, including Baal), as seen by the following passage:
2When the Philistines took the ark of God, they brought it into the house of Dagon, and set it by Dagon.
3And when they of Ashdod arose early on the morrow, behold, Dagon was fallen upon his face to the earth before the ark of the LORD. And they took Dagon, and set him in his place again.
4And when they arose early on the morrow morning, behold, Dagon was fallen upon his face to the ground before the ark of the LORD; and the head of Dagon and both the palms of his hands were cut off upon the threshold; only the stump of Dagon was left to him.

Apparently they worshiped Ashtaroth and Baal-zebub (known as the 'god of Ekron - a Philistine city) as mentioned in the verses below.
However, no archaeological evidence whatsoever has been found to support this account of a Dagon-centric Philistine religion. This is not to say that there is no evidence for Dagon at all -- the deity is attested from Mesopotamia to Ugarit in Syria -- but there is no evidence for Dagon's place in the Philistine pantheon. Rather, the archaeological evidence for Philistine deities during Iron Age I (the biblical period) consists of small figurines of female deities and lion-shaped libation jugs -- nothing that would hint at a male supreme deity.
