Beef brains and calf or veal (juvenile beef) brains are used in certain types of ethnic cooking, such as French cuisine, Portuguese cuisine, Pakistani cuisine (known as Maghaz in Urdu) and Mexican cuisine (known as sesos in Spanish), (often seen in tacos and burritos) as well as certain regional cuisine in the United States.
Beef brains have a mushy texture and very little inherent flavor and are typically flavored with sauces such as chile sauce and Sauce ravigote. Use of beef brains and spines for human consumption is restricted in many locales due to the possibility of transmission of "Mad Cow Disease" or BSE, which may be transmitted to humans via bovine nervous tissue, however, there have been few reported human cases of BSE type diseases being transmitted to humans in areas where consumption of bovine spine and brains are common.
